These recipes are great, thanks Lou. I can use most of these for Kayleigh as she is Dairy intolerent and I can swap the butter for her dairy free spread.

I like carrot cake too but never heard of putting raisins in it, maybe they help with the sweetening ??

Most carrot cakes I have brought from the shops have had raisins in but all my recipes don't

As I say, I think they are just there to introduce a 'natural' sweetener to the cake mix x The introduce the sugar to the bloodstream much more slowly than refined sugar because the fibre content slows it all down, therefore your blood sugar raises slowly.
