Frog in a Bucket
Well, it's a bit like Toad in the Hole ... but I don't like sausage.
I've always had problems with anything Yorkshire Puddingy - it rises nicely for me, but takes forever to chip out of the tin. Then I got some silicone muffin cases. I think a batter made with 150ml milk, two oz flour and one egg does for six cases and two cases per person with a normal appetite (ie not teenagers).
First chop up an onion and soften in a little oil (most of my recipes start like this) (except the cakes and biscuits). Chop up some left-over cooked chicken. Drain a can of sweetcorn.
Put a little oil in each muffin case and add a teaspoon of onion, a teaspoon of sweetcorn and some chicken. Put the muffin cases on a tray in a hot oven (about 190-200 C).
Make the batter - the way you'd make pancake or Yorkshire Pudding batter (I have a Tupperware Shaker and I put the milk in, add the flour and shake, then add the egg and shake again - remember to check the lid's on tightly.
When it looks lump-free, take the tray from the oven, quickly slop in the batter to about half fill the cases and return to the oven for about twenty minutes. You can make a gravy with the surplus onion (and chicken/sweetcorn if you have any left) and a stock cube and water while you're waiting.
