Mincemeat Empty Mincemeat

This is a very old Good Housekeeping recipe. But be warned once you have made it you will never want to eat shop bought stuff again!

4 oz currants
4 oz raisins
4 oz sultanas
2oz glace cherries
2oz mixed peel( I replace this with more cheries as I don't like it)
2 oz chopped nuts
4 oz cooking apple peeled and chopped
4 oz shredded suet
8 oz demerara sugar
1 level tsp mixed spice
Brandy or rum

Mince or finely chop the fruit, peel, nuts and apple.
Add the suet, sugar and spice.
Add enough brandy ( I use brandy)or rum to give a moist mixture. Stir well, leave covered for 2 days then put into sterilised jars. Ready to use after 2 weeks. Makes about 2lbs.

Thanks so much for this!!! I am definitely going to try it.... this weekend!!! Have loads of fruit - looks nice and alcoholly (love the word, sounds christmassy!)
Looks like it will make 2 'jam' jars (1lb) cant wait now to do it santa

I've used this recipe for years but add a few more nuts (nibbed almonds) and some dried cranberries as well.
Makes 2 jars and a little bit left over to test! Not all jars are standard 1lb ones these days

It should fill 2 normal size jam jars but I only bottle the bit that's left after I've made the mince pies. Seems pointless putting it in a jar only to take it out again a couple of days later!

Provided you have enough booze in it, it keeps for a few months. I did once keep a jar for a year but it had dried out rather a lot but was still edible - just!

I guess it could be frozen instead if you wanted it to last longer - not tried to freeze this one but used to freeze the one that I used to make ages ago he he Smile
