Slimming Cake!!!!!!! Empty Slimming Cake!!!!!!!

For any of you following the Slimming World programme -here's a great 'cake' recipe
Almost Sinless Couscous Cake
(whole cake only ½ Syn on Green)

2 eggs
4oz plain couscous
1 tspn baking powder
½ cup sweetener

PLUS
for LEMON
juice and rind of 1 large lemon
1 Muller Light VANILLA yoghurt
for GINGER
2 tspns ginger
1 Muller Light TOFFEE Yoghurt


1. Cover couscous with boiling water and leave to stand. Separate grains with a fork and allow to cool a little
2. Whisk eggs and add juice & rind of lemon (or ginger) baking powder, sweetener and yoghurt
3. Add couscous and mix well
4. Place in a lined and oiled (spraylite) ovenproof dish
5. Bake for 15 minutes at Gas 6 - 200°
6. Turn down to Gas 4 - 180° and cook for a further 30 minutes or until set and golden brown

I've never thought of using couscous in cakes!
Not sure I fancy that, but then I'm not a huge cake eater.

I love lemon cake and this is a good substitute for a really satisfying pud too.
Put some in the freezer before we went away but haven't tried seeing how it defrosts yet.
