Baileys Chocolate Truffles
Haven't made these but just spotted it in our local monthly mag. Sounds yummy
Serves 2
100g plain chocolate
50ml double cream
14g butter
1 tbsp Baileys or other liqueur
for coating afterwards : good quality plain, milk or white chocolate
Method
1.Pour the cream into a saucepan and bring to the boil
2.Break the chocolate into chunks and add to the cream, stirring until melted and thoroughly mixed.
3.Remove the pan from the heat and add the butter, stirring until smooth
4.Add the Baileys or liqueur and pour the whole mixture into a bowl
5.Place the bowl in the fridge for about an hour until temperature has gone down but not set.
6.With an electric whisk, beat the mixture until is has lightened in both colour and texture.
7.Replace in the fridge and leave overnight. Worth the wait.
8.Remove the bowl and with teaspoon take small amounts and roll them into balls. Dont handle the mixture too much.
9.Finally roll the truffles in either cocoa powder, chopped nuts, dessicated coconut or grated chocolate but better still dip them in melted chocolate and leave them on greaseproof paper in the fridge to set.
Keeps for 1 week in the fridge and 6 weeks in the freezer

Jacky this is getting way to weird, I have a bottle of Baileys in the fridge that is getting near its use by date and Mike was going to throw it away, I said no and that I will find something to do with it and ta darrrr you give me a recipe

Made the mixture and then made a few up yesterday but they have gone already, I was good and only had a couple but the human dustbin I live with ate the rest

Martins the same but he doesnt put on any weight and you won't see him on Saturday as he has decided not to come
