Fish Dish Empty Fish Dish

I haven't made fish dish for ages, but I had some frozen fish - you can slice the fillets even when they are frozen and, because they are only finger sized, they cook from frozen. You can use any fish - I had white fish, but *Yellow Peril's good as well (or do a mixture of fishes). You can use onion instead of leek, but onion is a stronger taste.

Cut leek(s) into four and then into matchstick sized bits and soften in oil on a low heat. Add chopped tomatoes and mushrooms. Put into a shallow dish and cut fish into finger sized slices to spread on top (add seafood if you want). Cover with pasta sauce or tomato passata and **cheese sauce and bake for 20-25 minutes at 180.

* Yellow Peril - smoked haddock - bright yellow of a hue not found in nature.

**Cheese sauce - 2 oz butter, 2 oz cornflour, 1 pint milk, grated cheese - melt the butter, add the cornflour and mix, add the milk slowly, stirring. When the sauce thickens, add the grated cheese.

Love fish and love cheese but cant eat the 2 together, just the smell of the 2 combined makes me wretch, reminds me of the old covered market we had here in Dover and the 2 strongest smells as soon as you went in there was fish and cheese Laughing
Would be great made with just a white sauce though thanks Ann Smile
