Are we going to get a Summer this year?
Yet another day of rain after a sunny start. Those floods in Ireland looked bad too. I'm getting fed up with the constant wind and rain. We had 2 warm & dry days for our last week away nearly a month ago but its been pretty bad since. Hope its better next week too when we're off to Cornwall.
Hope all of you that have been holidaying in the UK have found some sun at least. Had to look out my thicker cardi as its only 18 degrees today. Roll on next February when we'll be off to enjoy some Aussie sunshine again

I started off with getting a bit of colour after looking like I had seen a ghost for so long and now it is fading fast, now if we got a tan from being in the rain we would all be lovely and brown by now or rusty lol

Me dad didn't have those type of inclinations, so no woolly coat for me he he

I always said I was so short because i had shrunk from the amount of rain in my hometown
Alan calls it Wet Lothian instead of West!!!
And no Jayne, my Dad wasn't of the wooly inclination either
I heard on the weather forecast a mention of We(s)t Lothian and how they are having a lot of rain just now
In fact they say up there that scattered showers with outbreaks of sunshine and a cold northerly wind, is good weather
Guess that's where I got my rusty back from then
One good thing about this weather........our raspberries are really plump and sweet and we seem to have a bumper crop too
I just can't seem to keep up with picking them

I love raspberries, they are my fav fruit, dont they
make something in scotland with rasperries and porridge oats?

You can also add raspberries to Atholl Brose (oats, whisky, eggs and honey) but the dish I think you mean is called CRANACHAN
Ingredients For Cranachan
60g of medium oatmeal
150g of raspberries
4 tablespoons of malt whisky
4 tablespoons of runny Scottish honey
600mls of double cream
How To Make Cranachan
1.Scatter the oatmeal onto a baking tray and toast in a low oven or under the grill until they become golden brown. Do stand and watch this because they can easily and quickly burn. The book Nick Nairn's New Scottish Cookery advises toasting the oatmeal with a half measure of sugar together to give a crunchy texture and caramel flavour. This is done either under the grill or with care in a non stick frying pan using a medium heat and tossing often. Nick Nairn uses pinhead oatmeal and uses soft brown sugar. He also recommends tossing the raspberries in whisky and warm honey for an enhanced flavour. Once prepared he hen drizzles any extra whisky with the warmed honey over the cranachan.
2. Blend 50g of the raspberries in the liquidiser until they become smooth.
3. Whip the double cream until a stiff mixture forms
4. Stir in the honey and the whisky and mix well. Do use a good quality malt whisky to enhance the flavour. We have found Glenlivet, Macallan, Glenmorangie, Glenfiddich, Isle of Jura and our local malt, Glen Garioch to be particularly tasty. We use a different malt each time we make Cranachan with raspberries to enjoy a new taste.
5. Fold in 50g of the toasted oatmeal then fold in 50g of the raspberry puree. A rippled effect should be achieved.
