Fail Safe Sponge.....in a food mixer!
This is a nice easy sponge recipe that has NEVER failed me and I make a lot of cakes for people!
6 oz's self raising flour
6 oz's butter or marg
6 oz's caster sugar
3 large or 4 medium eggs
1 level tsp of baking powder
Now for the technique... simple... bung it all in the food mixer together and whizz till mixed! How simple is that! Into 2 x 8" tins and into the oven for approx 20 minutes... dont forget to skewer check x
There is enough mix to fill 2 x 8" round tins....and it makes a gorgeous Victoria Sponge filled with cream and jam! Lush!!! Or for covering with fondant and decorating however you like x

Gas mark 6 in the centre of the oven ladies xxx Remember to give it a poke with a skewer!!! and give it a bit extra if it doesn't come out clean x

thanks lou i must wipe the dust off my food mixer, i never use it but it will save my wrists ha ha, i make the boiled cake a lot but it hurts my wrists a lot to add the ingrediants (sp).

Ladies have just done Lou`s sponge, oh boy it is nice my first slice was just a tad warm, only needed a little jam, no cream or icing

I'll give this one a try this weekend.
I usually put 3 eggs on the scales and whatever they weigh I then weigh all the other ingredients to the same then just put it in the mixer until it's mixed and then put in the tins and then into the oven

If mine doesnt work then I say it is my oven because I think the thermostat might be on the blink
