I've made it now too - kept putting it off as I haven't made a cake for ages apart from the boiled one, but I shouldn't have worried. Thanks Lou, fantastic recipe and so quick. I filled mine with strawberry jam and buttercream using Flora buttery Not tasted it yet though - being good or I won't eat my dinner

Sorry to tease you Martin jokingly asked if I had made it and laughed, when I said I had he was really suprised as he had only been out a couple of hours and everything was washed up and put away. It is so light - really pleased with it. Martin suggested he take it to work tomorrow to give to his friends as he told them he would bring something in as it was his birthday I said he had to call in at the supermarket on the way to work I think he would have difficulty carrying it on his bike anyway

Lou there really is no reason why you couldnt have a small slice when you have your dinner and it really does work with using only half the amount of sugar so maybe give that a try and just put no added sugar jam in it, that's what I did and my blood level was 5.1 this morning which is no higher than any other day, mine now is usually between 4.2 and 5.6 depending on when I take it first one in the morning is usually higher and what I have eaten but the cake made no difference at all.

I have got to make my mum's birthday cake in May Jan, so I may well whip one with the half sugar method when I do that one!! I will have a slice of cake if it kills me!!!!!!!!!!!!!!!!!!!!!!!!!!!!

That's what I used too Lou It was really yummy - think yours have risen more than mine. I used the processor which isn't as good as a mixer.

Might be the size of your tins Jacky, mine wasn't quite as risen as Lou's either but think my tins are a bit wider looking at Lou's sponge, it's my excuse and I'm sticking to it, it tasted great though and that's the main thing

Any excuse.... maybe it's just that I have been making it this way for the past 10 years and am more used to the recipes than you guys... my tins were 8" tins....

Got all the stuff to make another one today I got raspberry jam though, the no added sugar one from Tesco's is really nice was going to get the marmalade but didnt much like the look of it

My fave is apricot..... also love lemon curd but have yet to find a reduced sugar one

Lou do you have to grease the tins because mine keep sticking to the bottom of the tins.

I greased mine and put a piece of greaseproof paper in the bottom too Janette Had no problem turning them out.

Yes Janette, sorry I always assume peeps will grease and line the bottom of the tins
